Raspberry Mojito

This past weekend in Toronto was extra hot. I made the wrong decision to clean up my patio when it felt like 45 degrees outside. To reward myself for all my hard work in the evening, I hit up a local restaurant patio to enjoy the warm weather with some food and drinks. Earls Kitchen + Bar has a cute patio and BONUS it was happy hour. Their Happy Hour is every day from 3:00 – 6:00 p.m. & 9:00 p.m. till close. My friends and I ordered a bunch of apps to share for the table including: buffalo cauliflower, lobster tostadas, garlic fries and chicken tacos. One of my favourite drinks to order at Earls is either the Mango Daquiri or the Raspberry Mojito. Both of which are so refreshing and delicious! After ordering one too many mojitos I realized why have I never added fruit to my homemade mojitos before? The next day I tried it at home and it was easy as 1, 2, 3! I grow fresh mint at home to make sure I am always ready to whip up a mojito… or to make a simple peppermint tea.

Raspberry Mojito Ingredients

RASPBERRY MOJITO

Ingredients

  • 4-8 fresh mint leaves
  • 1/2 a lime wedged
  • 3-4 raspberries
  • 4 oz lime flavoured sparkling water
  • 1 tbsp sugar
  • 2 oz of your favorite rum

Instructions

  1. In a glass muddle together the lime wedges, sugar, and mint until the sugar is dissolved
  2. Add in the raspberries and muddle together
  3. Add in your favorite rum (I prefer amber over white rum)
  4. Fill glass with ice, and top with sparkling water
  5. Garnish with a sprig of mint
